Fruit Scones

Makes 12


1 cup self-raising flour
1 cup wholemeal self-raising flour
2 tablespoons margarine, softened
½ cup sultanas
½ teaspoon ground mixed spice
1 cup reduced-fat milk


  1. Preheat the oven to 220°C. 
  2. Sift the flours into a large bowl; rub in the margarine with your fingertips. 
  3. Stir in the sultanas, peel and spice.
  4. Pour milk into the flour mixture and bring together to make a soft dough.
  5. Lightly dust a work surface with extra flour, then roll out the dough to 2cm. 
  6. Use a 4cm cutter to make rounds. Re-roll the trimmings and repeat to make more. 
  7. Transfer to a non-stick baking sheet.
  8. Bake for 15 minutes, until well risen and golden.
