1 ripe avocado
2 cups rocket leaves
50g crumbled reduced fat feta cheese
½ cup walnuts
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
- Cut avocado in half and remove seed. Remove skin and cut the flesh into slices.
- Cut mango into 2cm cubes.
- Wash rocket and set aside.
- Separate radicchio leaves, wash and roughly shred.
- To make the dressing, combine the olive oil and balsamic vinegar in a small dish.
- Add all ingredients to a salad bowl and toss gently to combine. Drizzle over salad dressing.
